This champagne is a blend of Chardonnay, Pinot Noir, Chenin Blanc, and Colombard.  While it is labeled Brut, the finish is more medium-dry but not at all sweet.  It has a yeasty, tingly nose and is quite crisp with spicy fruit flavors.

Korbel Brut is a great choice with medium spicy ethnic cuisines.
